  • 2 Limes
  • 150 g dried cranberries
  • 250 ml Lemonade
  • 250 g Butter or margarine
  • 1 package Vanillin sugar
  • 200 g Sugar
  • 4 Eggs (size M)
  • 375 g Flour
  • 1 package Baking Powder
  • 3 TABLESPOONS Orange liqueur
  • 150 g Icing sugar
  • 1-2 TABLESPOONS Cranberry juice
  • 7-10 Tbsp Fat and flour
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the lime, grate dry and thinly grate the peel of one lime. From the other lime, cut the peel into a spiral shape. Squeeze the limes. Simmer cranberries and 100 ml lemonade for about 2 minutes, then remove from heat. Cream the fat, grated lime zest, vanilla sugar and sugar with the whisk of the hand mixer.

    Stir in the eggs one by one. Mix flour and baking powder and stir in alternately with 150 ml lemonade. Finally, fold in the cranberries (do not allow to drip off). Pour the dough into a greased and floured box form (1.75 litre capacity; 27 cm long) and bake in a preheated oven (electric range: 175 °C/ convection oven: 150 °C/ gas: level 2) for 50-60 minutes. If the surface of the cake becomes too dark, cover with aluminium foil. Remove the cake from the oven and after approx. 15 minutes turn out onto a cake rack. Mix liqueur and lime juice and sprinkle the cake with it. Let the cake cool down. Sieve the icing sugar into a bowl. Add cranberry juice and mix to a thick glaze.
