Coriander Guacamole

Ingredients

Servings: 4
  • 4 Tomatoes
  • 1 green chili pepper
  • 1 TEASPOON Cumin
  • 7-10 Tbsp Salt
  • 1 TABLESPOON Lime juice
  • 1 Avocado (not too soft)
  • 1 TABLESPOON Lemon juice
  • 1/2 bunch Coriander

Directions

    Wash, clean and quarter the tomatoes and cut out the seeds. Cut the flesh into fine cubes. Carve the chilli pepper lengthwise and remove the seeds. Cut the pod into very fine cubes.

    Mix tomatoes and chili. Season with cumin, salt and lime juice. Halve the avocado and remove the stone. Peel avocado and sprinkle with lemon juice. Cut avocado into fine cubes.

    Wash the coriander and dab dry. Put some leaves aside for garnishing. Pluck the leaves from the stems and chop them coarsely. Carefully fold the avocado and coriander into the tomato mixture.

    Garnish with coriander. Tortilla chips taste great with it.
