Copenhageners with exotic fruit salad

Ingredients

  • 1 pack of (450 g) deep-frozen puff pastry (10 slices ready to serve)
  • 1/4 l Milk
  • 1 package Cream powder "Vanilla flavor" for bakeable pudding cream
  • 1 Egg Yolk
  • 2 TABLESPOONS Whipped cream
  • 50 g flaked almonds
  • 1/2 (approx. 150 g) Pomegranate
  • 1 (approx. 300 g) Papaya
  • 1 TABLESPOON Lemon juice
  • 2 TABLESPOONS Honey
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Flour

Directions

    Place the puff pastry slices next to each other and defrost. Roll out the slices slightly on a lightly floured work surface. Turn the dough corners towards the middle and place on two baking trays.

    Pour the milk into a tall mixing bowl. Add cream powder and mix with the whisk of the hand mixer for approx. 1 minute at lowest setting. Then continue beating for 1 minute on the highest setting.

    Put some pudding cream in the middle of each piece of dough. Mix the egg yolk and cream and brush the edges of the dough with it. Sprinkle with almond flakes. Bake one after the other in a preheated oven (electric: 200 °C/ gas: level 3) for about 15 minutes.

    In the meantime knock pomegranate seeds out of their skins. Halve the papaya and remove the seeds with the help of a spoon. Peel papaya and cut into small pieces. Mix lemon juice and honey and mix with the pomegranate seeds and the papaya.

    Let Copenhagen cool down and spread the exotic fruit salad on top. Dust with icing sugar and serve. Makes 10 pieces.
