Wash cured pork. Boil 1 litre of water. Add the meat and cook for about 30 minutes. Peel, wash and cut carrots into thick sticks. Peel, wash and cut celery into pieces.
Clean, wash and cut the leek into rings. Add vegetables to the meat about 15 minutes before the end of the cooking time. Wash and chop the parsley. Take out the slices of pork, cut into cubes and add to the vegetables again.
Stir in the mashed potato powder. Season to taste with salt and pepper. Fill vegetable stew into plates, sprinkle with parsley.
