Coloured vegetable soup

Ingredients

  • 250 g Carrots
  • 300 g broad beans
  • 150 g Cutting beans
  • 1 Onion
  • 200 g streaky smoked bacon
  • 1/2 l clear meat broth (instant)
  • 1/2 bunch Parsley
  • 7-10 Tbsp white pepper

Directions

    Wash and peel the carrots, cut them into halves lengthwise and cut them into half slices. Peel and wash the broad beans. Wash and clean the beans and cut them into pieces of about two centimetres. Peel and finely chop the onion. Cut bacon into cubes of one to two centimetres and put them in the microwave oven. Leave out without lid at 650 watts for about five minutes. Mix the onions and vegetables with the bacon.

    Pour 1/4 litre of stock over the bacon and cook covered at 650 watts for 13 minutes. Stir once in between. Pour in the remaining stock and heat up again at 650 watts for two minutes. Cover and leave to stand in the mould for three to five minutes. In the meantime wash parsley, dab dry and chop. Season vegetable soup with a little pepper and serve sprinkled with parsley
