Line a baking tray with baking paper. Beat the egg whites and 1 pinch of salt with the whisks of the mixer until stiff, adding sugar. Continue beating the beaten egg whites until the sugar is completely dissolved.
Pour the beaten egg white into a piping bag with a large star-shaped spout. Spray approx. 16 rings (each approx. 4 cm Ø) onto the tray and sprinkle with sugar pearls.
Bake or dry the rings in a preheated oven (electric cooker: 100 °C/circulating air: 75 °C/gas: see manufacturer) for approx. 2 hours with the oven door slightly open (insert a wooden spoon between the oven door).
Switch off the oven and let the rings cool down in the oven.
