Cut the sausage into slices. Drain artichokes on a sieve and cut in half. Peel and finely chop the onion. Clean, wash and chop the peppers.
Whisk eggs and milk and season with salt, pepper and paprika. Heat oil in a pan, fry onions, sausage, artichokes and bell peppers briefly while turning and pour egg milk into the pan. Leave to fry over medium heat, turning several times with a spatula. Serve garnished with marjoram as desired
