Cock a Leekie (Scottish chicken and leek pot)

Ingredients

Servings: 6
  • 1 ready-to-cook chicken (approx. 1.4 kg)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 2 Bay leaves
  • 1/2 bunch Parsley
  • 4 Stem(s) fresh thyme
  • 3 discs Bacon
  • 2 kg Leeks (leek)
  • 100 g dried semi-soft plums without stone

Directions

    Wash the chicken and put it in a pot. Pour about three litres of water so that the chicken is covered. Add two teaspoons of salt, laurel, parsley, thyme and bacon. Bring everything to the boil and simmer in the open pot for 1 1/2 hours.

    Skim off any foam several times. Clean, wash and finely chop (dice) the leek. After 30 minutes cooking time add 1/3 of the leek to the chicken and cook it. Remove the chicken and let it cool down a little.

    Pour broth through a sieve and bring to the boil. Add the rest of the leek and plums and simmer for another 15 minutes. Remove chicken meat from skin and bone and cut into bite-sized pieces.

    Season soup with salt and pepper to taste. Add the meat and heat it up. Serve everything.
