Ingredients

  • 1 kg waxy potatoes
  • 2 Onions
  • 2 discs (75 g each) cooked ham
  • 2 TABLESPOONS clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 4 Eggs (size M)
  • 7-10 Tbsp Sweet peppers
  • 7-10 Tbsp chopped parsley

Directions

    Wash the potatoes and cook in boiling water for about 20 minutes. Peel and chop the onions. Cut ham into pieces. Drain potatoes, quench, peel and let cool. Cut potatoes into slices.

    Heat clarified butter in a large pan. Brown the potatoes. Add onions and ham and fry until golden brown. Season with salt and pepper. Beat the eggs. Season with salt, pepper and some paprika. Pour the eggs over the potatoes and let them fry, pushing them together from time to time. Arrange farmer's breakfast on plates. Sprinkle with parsley.
