Ingredients

  • 3 Protein (size M)
  • 175 g Sugar
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 1 TEASPOON Lemon juice
  • 300 g ground almonds (with skin)
  • 1 TEASPOON ground cinnamon
  • 75-100 g Icing sugar
  • baking paper

Directions

    Beat the egg whites, sugar, salt, vanillin sugar and lemon juice with the whisks of the hand mixer until the sugar is completely dissolved. Remove 7 tablespoons of the egg white mixture and put aside to coat the cinnamon stars. Mix almonds and cinnamon and fold evenly into the remaining egg white mass. Roll out the dough 6-7 mm thick on a work surface dusted with icing sugar. Cut out stars of different sizes and place them on two baking trays lined with baking paper. Spread the rest of the egg white mixture thickly. Bake in a preheated oven (electric cooker: 150 °C/ not suitable/ gas: level 1) for 20-25 minutes
