Beat egg whites until stiff. Add sugar and vanillin sugar, beat for another 10 minutes until the sugar is dissolved. Stir in lemon juice. Put 8 tablespoons of beaten egg whites aside to coat the cinnamon stars. Fold the cinnamon and almonds into the remaining beaten egg white
Roll out the mixture on a worktop dusted with icing sugar to a thickness of approx. 8 mm. Cut out stars (approx. 6 and 7 cm in size) and place them on a baking tray covered with baking paper. Knead the rest of the mixture again and cut out more stars. Spread the stars thickly with the remaining beaten egg white. Bake in the preheated oven (electric cooker: 150°C/ gas: level 1) for about 25 minutes
