Ingredients

  • 50 g ground hazelnuts
  • 250 g Flour
  • 75 g Sugar
  • 1 pinch Salt
  • 150 g Butter
  • 1 egg (size M)
  • 3-4 Tbsp condensed milk
  • 30 g Pistachio kernels
  • 50 g red cherries
  • 50 g dried apricots
  • 40 g candied pineapple
  • 175 g Icing sugar
  • 1 TEASPOON Lemon juice
  • 1 Protein (size M)
  • 30 g Hazelnuts
  • 50 g brown almonds
  • 10-15 g ground pistachio kernels
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Roast ground hazelnuts in a pan without fat and let them cool down. Knead flour, hazelnuts, sugar, salt, butter and egg with the dough hooks of the hand mixer. Finally knead with your hands to a smooth dough. Wrap in foil and put in a cool place for about 1 hour. Roll out the dough not too thinly on a floured work surface and cut out small wreaths with a wreath shape (approx. 7 cm Ø/ inner circle approx. 2 cm Ø).

    Spread on 2-3 baking trays lined with baking paper. Knead the dough again, roll out again and cut out until there is no dough left. Spread wreaths with condensed milk. Bake one after the other in a preheated oven (electric: 200 °C/ gas: level 3) for about 10 minutes. Let the cookies cool down on a cake rack. In the meantime, cut the pistachios in half for decoration. Also halve the cherries or cut them into slices. Cut apricots into slices, cubes or quarters as desired. Cut pineapple into sticks. Put icing sugar, lemon juice and egg white in a mixing cup and mix well with the whisk of the hand mixer for about 1 minute.
