Ingredients

  • 1 untreated orange
  • 150 g Butter or margarine
  • 1 pinch Salt
  • 1 package Vanillin sugar
  • 230 g Sugar
  • 4 Eggs (size M)
  • 300 g Flour
  • 7-10 Tbsp ground cinnamon
  • 2 TEASPOONS Baking Powder
  • 2 Protein (size M)
  • 12 red sugar pearls
  • 7-10 Tbsp Icing sugar
  • 24 Coloured paper cuffs

Directions

    Wash the orange, rub dry and thinly grate the peel. Squeeze the orange. Cream fat, salt, vanilla sugar, orange peel and 150 g sugar with the whisks of the hand mixer. Stir in the eggs one by one. Mix flour, cinnamon and baking powder and stir in alternately with the orange juice. Line the recesses of a muffin tray with 2 paper sleeves each. Spread the dough over the troughs.

    Bake in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: level 2) for 20-25 minutes. Beat the egg whites until stiff, adding 80 g sugar. Pour the meringue mixture into a piping bag and about 5 minutes before the end of baking squirt a small cap on each muffin and cover with a red sugar pearl. Turn up the temperature of the oven (electric cooker: 200 °C/ circulating air: 175 °C/ gas: level 3) and finish baking the muffins for about 5 minutes. Remove the muffins from the tin and let them cool down on a cake rack. Dust with icing sugar before serving or packing
