Boil 1/8 l water with 1-2 tbsp. sugar and lemon peel. Peel, quarter and core the pears. Steam in the stock for 5-6 minutes. Let cool down
Break chocolate into pieces. Mix pudding powder with 3 tbsp. milk. Bring 3/4 l milk, chocolate and vanillin sugar to the boil. Thicken with pudding powder. Season to taste with 2-3 tbsp. sugar
Drain the pears and cut them into slices. Serve with the soup in plates. Spread cream in streaks. Decorate with nuts and balm. Tastes hot and cold
