Cut the sponge cake into small pieces. Drain the apricots well in a sieve. Peel the pineapple, remove the stalk and cut into small pieces. Chop the chocolate roughly. Melt chocolate and coconut oil in a bowl over a warm water bath.
Peel and slice the banana and sprinkle with lemon juice. Arrange fruit, sponge cake, sugar pearls and marshmallows in bowls or on a plate. Pour chocolate into the fondue bowl.
