Ingredients

  • 75 g dried cranberries
  • 100 g Sultanas
  • 3 TABLESPOONS Orange liqueur
  • 200 g white chocolate
  • 60 g double cream
  • 100 g Butter
  • 1 Organic Orange
  • 250 g Amaretti biscuits
  • 200 g Dark chocolate
  • 1 TABLESPOON Caramel syrup
  • 75 g Milk chocolate
  • 50 g Whipped cream
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp fresh cranberries
  • 1 Freezer bag
  • 7-10 Tbsp Cling film
  • baking paper

Directions

    Finely chop the cranberries and sultanas. Mix with orange liqueur, cover and let stand for about 2 hours.

    In the meantime, roughly chop the white chocolate. Melt with double cream and 25 g butter in a bowl over a warm water bath. Remove from the bain-marie. Wash the orange hot, grate dry and finely grate the peel.

    Finely crumble the biscuits in a freezer bag. Weigh 150 g cookie crumbs and mix with melted chocolate, orange peel and chopped berries. Cover and chill for about 1 hour. Divide the chocolate mixture into 8 equal portions and shape into balls with wet hands.

    Cover and chill again for about 1 hour.

    Coarsely chop the dark chocolate. Melt with syrup and remaining butter over a warm water bath. Remove the bowl from the water bath. Stir in remaining biscuit crumbs. Roll out the mixture between 2 layers of baking paper to form 8 circles (each approx. 15 cm Ø).

    Chill for about 30 minutes.

    Peel off baking paper. Place each chocolate berry ball on a chocolate slice and wrap it in it quickly. Form into smooth balls by pressing lightly. Chill for another 30 minutes.

    In the meantime, roughly chop the milk chocolate. Heat the cream in a small pot. Remove the pot from the stove. Melt chocolate in it while stirring. Spread the chocolate sauce on plates. Put chocolate balls on top and sprinkle with icing sugar.

    Possibly decorate with fresh cranberries.
