Grate some chocolate (approx. 1 tablespoon). Chop the rest of the chocolate and melt in a hot water bath. Whip the cream until stiff. Fold liquid chocolate with a dough scraper into the cream and divide into four glasses.
Orange hot wash, dry, half peel thinly rub, halve fruit and squeeze half. Wash cherries, remove stalks, stone and halve. Mix the cherries, orange peel and juice.
Whip the crème fraiche with the whisk of the mixer for approx. 3 minutes, adding the sugar. Crumble the brownie. Spread the brownie, cherries and crème fraiche in the glasses. Sprinkle with the chocolate shavings and chill for about 1 hour.
