For the radish ham tartar clean and wash radishes. Finely dice the radishes and gherkins. Wash 1 bunch of chives, shake dry and cut into small rolls. Mix everything with diced ham, cucumber stock and oil.
Season to taste with pepper.
For the chive shavings, wash 1 bunch of chives, shake dry and cut into small rolls. Separate the eggs. Whisk the egg yolks, 1 level teaspoon of salt and milk. Stir in flour and chives.
Beat the egg white with 1 pinch of salt until stiff, fold into the dough.
Heat 1 tsp. clarified butter in a coated pan (approx. 24 cm Ø). Pour in half the dough and bake at low heat for 4-5 minutes until golden brown. Quarter and turn the sardines with a spatula.
Bake from the other side also golden yellow. Tear into pieces with two forks, remove and keep warm in the oven. Bake the remaining dough in the same way. Serve the grated meat with the tartar.
It goes well with sour cream. Drink tip: juice spritzer.
