Wash the rosemary and shake dry. Pluck needles from the stems and chop finely. Peel garlic and chop very finely. Drain and dice the tomatoes. Cut the chilli lengthwise, remove seeds, wash and chop finely.
Cut the cheese into cubes.
Mix vinegar, salt and pepper and fold in the oil. Fold in tomatoes, rosemary, chilli, garlic, olives and cheese. Leave to stand for at least 30 minutes. Served with: baguette.
