Peel the mango and cut the flesh into slices from the stone. Cut the mango and turkey breast into cubes. Clean and wash the chicory and remove 5-6 outer leaves from each. Cut the remaining chicory into fine strips
Cut the chilli lengthwise, wash, seed and chop finely. Wash the chives and cut into fine rolls. Mix yoghurt, lemon juice, chilli and chives. Season to taste with salt and pepper
Arrange the chicory leaves on 4 plates. Mix chicory strips, mango and turkey breast and arrange on top. Pour yoghurt sauce over them. Garnish with lemon wedges. Serve with fresh baguette
