Chickpea salad with feta, coriander and spring onions

Ingredients

Servings: 4
  • 1 collar Spring onions
  • 1/2 Pot of coriander
  • 1 can(s) (425 ml) Chickpeas
  • 175 g Feta cheese
  • 7-10 Tbsp Juice of 1 lemon
  • 1 TABLESPOON Sugar
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 2 TABLESPOONS Olive oil
  • 2 red onions

Directions

    Clean and wash spring onions and cut into fine rings. Wash the coriander, shake dry and pluck the leaves from the stems. Drain the chickpeas, rinse well and let them drain. Crumble the cheese and mix everything together.

    Mix lemon juice, sugar, salt and pepper. Fold in the oil and pour the vinaigrette over the salad. Peel onions and cut into rings. Sprinkle over the salad
