Braised aubergines and peppers with ginger sauce

Ingredients

Servings: 4
  • 2 Aubergine (approx. 250 g each)
  • 2 red peppers (about 200 g each)
  • 1 green pepper
  • 3 TABLESPOONS Olive oil
  • 2 Garlic cloves
  • 50 g Ginger Tuber
  • 4 TABLESPOONS Soy sauce
  • 1 TABLESPOON rice vinegar
  • 3-4 Stem(s) Coriander
  • 20 g Sesame seed

Directions

    Wash the aubergine, grate dry, halve lengthwise and cut into pieces. Halve the bell peppers, clean, wash and cut into strips. Heat the oil in a large pan, fry the aubergines until golden brown, add the peppers.

    Braise the vegetables for about 10 minutes while turning.

    Peel garlic and ginger, chop finely and add to vegetables, deglaze with soy sauce and vinegar.

    Wash the coriander, dab dry and chop finely. Roast sesame seeds in a pan until golden brown, remove. Pour sesame and coriander over the vegetables.
