Ingredients

Servings: 4
  • 1 Chicken (approx. 1.2 kg)
  • 3 red peppers
  • 500 g Mushrooms
  • 2 Leek sticks (leek)
  • 30 g clarified butter
  • 7-10 Tbsp Salt
  • 7-10 Tbsp white pepper
  • 7-10 Tbsp Sweet peppers
  • 1 Branch rosemary
  • 3/8 l clear chicken stock (instant)
  • 1/8 l dry white wine
  • 3 TABLESPOONS Whipped cream
  • 3 TABLESPOONS dark sauce thickener
  • 7-10 Tbsp Lemon juice
  • 1 pinch Sugar
  • 7-10 Tbsp Lemon wheel for
  • 7-10 Tbsp Garnish

Directions

    Wash the chicken, dab dry and cut into 8 pieces. Clean and wash the peppers. Cut into strips and then into even rhombs. Clean, wash and quarter mushrooms. Clean, wash and cut leek into rings.

    Heat clarified butter in a large pot. Fry the poultry pieces in it until golden brown all around. Season with salt, pepper and paprika. Add some rosemary needles. Deglaze with chicken soup and wine. Braise in a closed pot at medium heat for about 30 minutes.

    Add vegetables and cook for another 10 minutes. Add cream while stirring, bring to the boil and stir in the sauce thickener. Season sauce with salt, pepper, paprika and lemon juice and sugar. Garnish with lemon wheels and rosemary.
