Chicken filet in Parma ham wrapper with fried tomatoes and green rice

Ingredients

  • 40 g Long grain rice
  • 7-10 Tbsp Salt
  • 2 stem(s) Basil
  • 140 g Chicken filet
  • 1 washer (approx. 15 g) Parma ham
  • 1 TEASPOON Olive oil
  • 1 Garlic clove
  • 150 g smaller tomatoes (e.g. red pearl)
  • 100 ml Vegetable broth (instant)
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar

Directions

    Prepare rice in boiling salted water according to package instructions. Wash the basil, dab dry and put 1 tip aside. Pluck the remaining basil leaves from the stalks. Wash the meat, dab dry and wrap with ham, wrapping 1 basil leaf with it.

    Coat a coated pan with oil. Fry the meat for 8-10 minutes. Peel and slice the garlic. Wash tomatoes and dab dry. Coarsely chop the remaining basil.

    Add tomatoes and garlic to the pan and fry for 3 minutes. Pour the rice into a sieve and put it back into the pot. Add stock, bring to the boil and fold in basil. Season meat with salt and pepper and take out.

    Deglaze tomatoes with 2-3 tablespoons of water and season with salt, pepper and a little sugar. Cut the meat open and serve with the tomatoes and rice. Garnish with basil put aside.
