Wash the asparagus, cut off the woody ends. Cut the asparagus into thin slices at an angle. Leave heads whole. Peel and finely chop the onion. Peel garlic and chop finely. Wash the meat, dab dry and chop very finely. Heat the oil in a large pan, leave the ham out and take it out
Add the meat to the fat and fry vigorously while turning. Add onions and garlic, fry briefly, season with salt and pepper. Add the ham again, except for 1 tbsp
Add fat, melt, dust with flour, sweat briefly and deglaze with broth while stirring. Bring to the boil, simmer for about 2 minutes. Stir in mascarpone and boil up briefly. Season to taste with salt, pepper and sugar
Meanwhile, prepare the pasta in boiling salted water according to the instructions on the packet. Add the asparagus about 3 minutes before the end of the cooking time, bring to the boil again and finish cooking. Pour the pasta and asparagus mixture into a sieve, drain briefly. Slice or finely grate the Parmesan cheese
Arrange the pasta-asparagus mixture with chicken bolognese on plates. Sprinkle with parmesan and ham, garnish with basil if desired
