Ingredients

  • 250 g Coconut flake
  • 1 TEASPOON + 1 sachet baking powder
  • 360 g Flour
  • 125 g Butter
  • 175 g Low-fat curd
  • 6 TABLESPOONS Milk
  • 6 TABLESPOONS Oil
  • 75 g Sugar
  • 1 package Vanillin sugar
  • 1 egg (size M)
  • 1 pinch Salt
  • 1 glass (340 g) Cherry Jam
  • 7-10 Tbsp Flour
  • baking paper

Directions

    Mix coconut flakes, 1 teaspoon baking powder and 60 g flour and add butter in flakes. Work into crumbles with your hands. Mix quark, milk, oil, sugar, vanilla sugar, egg and salt with the whisks of the hand mixer.

    Add 300 g flour and 1 packet of baking powder and knead into a smooth dough with the dough hooks of the hand mixer. Divide the dough into 8 equal pieces. Shape into flat cakes with floured hands and place 4 flat cakes each on a baking tray lined with baking paper.

    Spread the jam evenly on top and also add the crumbles evenly. Bake the baking trays one after the other in the preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: stage 2) for approx. 25 minutes.

    Remove from the oven, place on a rack and allow to cool. Whipped cream tastes good with it.
