Cheese crumble cake from the tray with cherry compote

Ingredients

Servings: 24
  • 750 g + 1 tablespoon of flour
  • 600 g Butter
  • 500 g Sugar
  • 1 pinch Salt
  • 2 packages Vanillin sugar
  • 2 (720 ml each) Glasses of cherries (morello cherries)
  • 2 packages Pudding powder "Vanilla Flavor"
  • 1,75 kg Low-fat curd
  • 7-10 Tbsp juice of 1/2 lemon
  • 8 Eggs (size M)
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp Grease

Directions

    For the crumbles, put 750 g flour, 500 g butter in flakes, 250 g sugar, salt and 1 packet of vanillin sugar in a large mixing bowl. Mix with the dough hooks of the hand mixer. Then work into crumbles with your hands. Spread 2/3 of the crumbles on a greased fat pan of the oven (32 x 39 cm) and press them into a base with your hands

    Pour the cherries into a sieve and collect the juice. Mix pudding powder with approx. 100 ml cherry juice. Boil up the rest of the cherry juice and 50 g sugar. Remove the pot from the heat, stir in the pudding powder and let it simmer again for about 1 minute while stirring. Fold in the cherries, allow to cool slightly and spread on the crumble base

    Melt 100 g butter. Mix quark, 200 g sugar, 1 packet vanilla sugar, lemon juice, eggs and 1 tablespoon flour with the whisk of the hand mixer until smooth. Stir in the butter quickly at the end. Spread the quark mixture over the cherries and sprinkle evenly with the remaining crumbles

    Bake in a preheated oven (electric cooker: 175 °C/ convection oven: 150 °C/ gas: see manufacturer) for approx. 1 hour. Remove from the oven, let it cool down and cut into pieces. Dust with icing sugar. Cream tastes good with it
