Wash, peel and halve the celery and first cut it into slices (0.2-0.3 cm) on the slicing machine and then into thin strips with a knife. Place in a bowl and sprinkle with flour. Stir with your hands
Heat the pot with oil. Add small portions of celery strips one after the other and deep-fry until they are light brown (2-3 minutes). Remove with a skimmer, drain briefly and place on a baking tray lined with kitchen paper
Arrange celery straw on plates and season with sea salt
