Peel, wash and roughly grate the carrots. Coarsely chop the walnuts and roast them in a pan without fat. Take out and let cool down. Put orange juice and carrots into the hot pan and steam everything for 6-8 minutes until soft. Let it cool down
Process carrots, walnuts, up to 1 tbsp. for sprinkling, honey and crème légère into a paste in the universal chopper. Sprinkle with walnuts set aside. Spread on bread and sprinkle with honey.
