Mix pudding powder, 100 ml milk and 50 g sugar. Bring the rest of the milk to the boil and remove from the stove. Stir in the pudding powder, place back on the stove and boil for at least 1 minute while stirring.
Separate the eggs and mix the egg yolk with 2 tablespoons of hot pudding. Then stir into the remaining pudding and remove from the heat. Beat the egg whites with the whisks of the hand mixer until stiff, adding 10 g sugar.
Immediately fold the beaten egg white into the hot pudding and divide into 4 cups. Decorate with a baby pear and serve hot or cold.
