Broccoli quiche with pear and cheese

Ingredients

  • 175 g Wheat wholemeal flour
  • 7-10 Tbsp Salt
  • 3 TABLESPOONS Whole milk yoghurt
  • 1 TEASPOON Honey
  • 45 g Butter or margarine
  • 500 g Broccoli
  • 25-30 g Walnuts
  • 1 medium onion
  • 3-4 Stem(s) fresh thyme
  • 500 g ripe pears
  • 100 g Gorgonzola cheese
  • 4 Eggs (size M)
  • 100 g Whipped cream
  • 150 g Fresh cream
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 7-10 Tbsp Cling film
  • 7-10 Tbsp Flour
  • 7-10 Tbsp Grease

Directions

    Put flour, 1/2 teaspoon salt, yoghurt, honey and 40 g fat in small pieces in a bowl. Knead first with the dough hooks of the hand mixer, then quickly with your hands to a smooth dough.

    Wrap in foil and refrigerate for about 30 minutes. In the meantime clean ##Broccoli##, divide into small florets and cut the peeled stem into small cubes. Precook broccoli in boiling salted water for 3-4 minutes.

    Place on a sieve and drain. Coarsely chop the walnuts, peel and finely dice the onion. Wash the thyme, dab dry and chop except for a little to garnish. Heat the rest of the fat in a frying pan, fry the onions and thyme briefly.

    Let it cool down. Wash, peel and slice the pears. Cut cheese into small pieces. Mix eggs, cream and crème fraîche. Add onions and thyme and season with salt, pepper and nutmeg.

    Roll out the dough into a circle (approx. 30 cm Ø) on a floured work surface. Line a greased quiche dish (approx. 25 cm Ø) with it and cut off the protruding edge. Prick the bottom of the pastry several times with a fork and cover with broccoli, pears and cheese cubes.

    Spread the glaze over it and sprinkle with walnuts. Bake in the preheated oven, 2nd shelf from below (electric oven: 200 °C/ gas: level 3) for 45-50 minutes. Cover at the end of the baking time if necessary.

    Garnish with thyme. Serve with fresh salad with tomatoes. Makes about 12 pieces.
