Ingredients

Servings: 4
  • 8 Pork medallions (approx. 75 g each)
  • 8 discs Bacon
  • 2 TABLESPOONS Oil
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 750 g Broccoli
  • 2 packs Light Hollandaise Sauce (ca. 250 g)
  • 7-10 Tbsp grated nutmeg
  • 50 g flaked almonds

Directions

  1. 1

Wash the meat and dab dry. Wrap 1 slice of bacon around each medallion. Heat oil in a pan, add meat and fry for 2-3 minutes while turning. Season with salt and pepper.

  2. 2

Cook over medium heat for about 3 minutes, turning occasionally. Meanwhile clean the broccoli, cut into florets from the stalk and wash thoroughly. Cook in boiling salted water for about 5 minutes until al dente.

  3. 3

Drain broccoli, rinse in cold water and drain. Warm up Sauce Hollandaise in a saucepan, season to taste with salt, pepper and nutmeg. Divide the pork fillet, broccoli florets and Sauce Hollandaise between 4 ramekins.

  4. 4

Sprinkle with almonds. Bake in a preheated oven (electric cooker: 200 °C/ convection oven: 175 °C/ gas: level 3) for 6-8 minutes, remove from oven. Wholemeal baguettes are delicious with it.
