Ingredients

Servings: 4
  • 1 TEASPOON Cinnamon
  • 5 TABLESPOONS Sugar
  • 400 g mixed berries (e.g. strawberries or raspberries)
  • 5 Eggs (size M)
  • 250 g Whipped cream
  • 7-10 Tbsp Salt
  • 8 discs Brioche or tin white bread (à approx. 35 g)
  • 3 TABLESPOONS clarified butter
  • 7-10 Tbsp Icing sugar

Directions

    Mix cinnamon and 4 tablespoons of sugar. Sort the berries. Wash and clean the strawberries, cut large berries into smaller pieces as desired. Mix fruits with approx. 2 tablespoons cinnamon-sugar, let marinate

    Whisk eggs, cream, 1 tablespoon sugar and 1 pinch of salt. Place half of the slices of bread next to each other in a flat bowl. Pour half of the egg milk evenly over the bread, turn it and let it soak for about 2 minutes

    Heat lard in portions in a large coated pan. Fry the soaked slices of bread in it at medium heat for 2-3 minutes on each side until golden brown and crispy. Keep finished Arme Ritter warm. Soak and fry the rest of the slices of bread in the same way

    Arrange the poor knights, sprinkle with cinnamon sugar. Add berries and serve
