Ingredients

  • 500 g Flour
  • 1 cube (42 g) Yeast
  • 25 g Sugar
  • 7-10 Tbsp 200 m lukewarm milk
  • 100 g Currants
  • 80 g Butter or margarine
  • 100 g Marzipan raw mass
  • 2 Egg Yolk
  • 1 pinch Salt
  • 7-10 Tbsp Flour
  • baking paper
  • 7-10 Tbsp little wooden skewers
  • 2 Protein
  • 2 (250 g each) Packages
  • 7-10 Tbsp Icing sugar
  • 7-10 Tbsp yellow food coloring
  • 7-10 Tbsp currants, pistachios, almond leaves, red jelly fruits and grated coconut

Directions

    Put the flour in a bowl. Make a depression in the middle and crumble the yeast into it. Sprinkle a teaspoon of sugar over it and add half the milk. Mix everything a little bit, cover and let it rise in a warm place for about 15 minutes.

    In the meantime, wash the currants and dab them dry. Add fat and marzipan to the remaining milk and stir until smooth. Add egg yolk, remaining sugar and salt and mix everything together. Then add the currants to the yeast dough and work everything into a smooth yeast dough.

    Let it go for another 20-30 minutes. Knead the dough and form into a roll on a floured work surface. Use a knife to cut off approx. 12 egg size and 12 walnut size pieces. Form balls from each of them and place them separately according to size on a baking tray lined with baking paper.

    Allow to rise for a further 8-10 minutes and bake in the preheated oven (electric oven: 200 °C/ gas: level 3) for 20-30 minutes until golden brown. Then let it cool down. Place a small "roll" as a head on each large "roll" using a wooden skewer.

    Stir egg white and sieved icing sugar until smooth (add a few drops of water if necessary). Colour yellow with food colouring. Cover the chicks with icing. Mark the "eyes" with currants, the "beak" with pistachios, the "wings" with browned almonds, the "comb" with pieces of jelly.

    Sprinkle yellow coloured coconut flakes (or leave white) over the chicks. Leave to dry well. Results in about 12 pieces.
