Bratwurst with Brussels sprouts

Ingredients

  • 750 g Brussels sprouts
  • 600 g Potatoes
  • 1/2 TEASPOON Caraway seeds
  • 7-10 Tbsp Salt
  • 2 Onions
  • 1 (approx. 200 g) Apples
  • 50 g fine cubes of bacon, smoked
  • 1-2 TABLESPOONS Oil
  • 4 boiled veal sausages (approx. 90 g each)
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Parsley

Directions

    Clean and wash the Brussels sprouts. Peel, wash and roughly dice the potatoes. Cover the sprouts, potatoes and caraway seeds and cook in boiling salted water for 15-20 minutes. In the meantime peel and dice the onions.

    Wash the apple, quarter it and cut out the core. Cut the apple quarters into thin slices. Leave bacon in a pan until crispy and finally add onions and apples and braise.

    Heat the oil in a frying pan and fry the sausages until golden brown, turning them over. Drain the potatoes and Brussels sprouts and fold into the bacon-onion mixture. Season with salt and pepper and keep warm.

    Arrange with sausages on plates and serve garnished with parsley.
