Wash the leg and dab dry. Heat lard in a casserole dish. Brown the turkey leg on each side. Season with salt and pepper. Braise in a preheated oven (electric cooker: 200 °C/ gas: level 3) for about 1 1/2 hours. In the meantime peel, wash and halve the potatoes. Clean, wash and cut the leek into pieces.
Add prepared vegetables to the turkey leg after about 15 minutes. Also season with salt and pepper. After another 15 minutes add tomato paste and bay leaf. Deglaze with 250 ml water and finish cooking. Stir the vegetables from time to time. Sprinkle with freshly chopped parsley. Serve garnished with fresh herbs as desired
