Bolognese stew with ciabatta croutons

Ingredients

Servings: 6
  • 200 g Carrots
  • 1 big onion
  • 1 Garlic clove
  • 150 g streaky smoked bacon
  • 5 TABLESPOONS Olive oil
  • 1 kg mixed minced meat
  • 3 TABLESPOONS Tomato paste
  • 1 can(s) (850 ml) Tomatoes
  • 1 l Meat broth
  • 2 TEASPOONS dried oregano
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 1 pinch Sugar
  • 500 g Broccoli
  • 150 g Ciabattabrot
  • 1 collar Rocket

Directions

    Clean, peel and wash the carrots and cut them into fine cubes. Peel onion and garlic, dice finely. Cut bacon into strips. Heat 1 tablespoon of oil in a large pot and fry the bacon. Add mince and fry until crumbly.

    Add carrots, onion and garlic, fry briefly. Add tomato paste and sauté briefly. Deglaze with tomatoes and stock, chop tomatoes with a spatula. Season with oregano, salt, pepper and sugar, simmer for about 15 minutes

    Clean and wash the broccoli and cut it into small florets. Peel and slice the broccoli stem. Add to the stew and simmer for another 12-15 minutes until the broccoli is cooked. Cut the ciabatta bread into cubes. Heat 4 tablespoons of oil in a frying pan and fry the bread cubes until golden brown.

    Wash the rocket, shake dry, clean and chop roughly. Season stew to taste again. Serve sprinkled with bread cubes and rocket. Serve with sour cream
