Black salsify soup

Ingredients

Servings: 4
  • 7-10 Tbsp Juice of 1 lemon
  • 750 g Black salsifies
  • 1 l clear broth (instant)
  • 250 g Broccoli
  • 30 g Butter or margarine
  • 30 g Flour
  • 100 g Whipped cream
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp grated nutmeg
  • 150 g Salmon ham
  • 7-10 Tbsp Pepper

Directions

    Fill a bowl with water and add the lemon juice. Wash and peel the black salsifies, cut them into pieces and put them into the lemon water. Bring the stock to the boil. Add black salsifies and cook over medium heat for about 15 minutes.

    Clean and wash the broccoli, divide into small florets and add to the black salsify 5 minutes before the end of the cooking time. Pour the broth through a sieve and collect it. Melt the fat in a pot and sauté the flour in it.

    Deglaze with the stock and bring to the boil while stirring. Refine with cream. Season to taste with salt, pepper and nutmeg. Add the vegetables to the soup and warm up. Cut salmon ham into strips and add to the soup.

    Sprinkle with pepper.
