Black pudding on sauerkraut

Ingredients

Servings: 4
  • 2 medium-sized onions
  • 1 Apples
  • 20 g clarified butter
  • 1 can(s) (850 ml) Sauerkraut
  • 1/8 l clear broth (instant)
  • 4 Juniper berries
  • 2 Bay leaves
  • 200 g Black pudding
  • 7-10 Tbsp Parsley

Directions

    Peel onions and cut them into rings. Wash, quarter, core and cut the apple into slices. Heat ten grams of clarified butter in a pot, fry half of the onion rings and apple slices in it, add sauerkraut and deglaze with stock.

    Add juniper berries and bay leaves. Stew the sauerkraut for 15 minutes. Cut blood sausage into slices. Heat the remaining clarified butter in a pan and fry the black pudding slices briefly.

    Remove and fry the remaining onion rings in it. Arrange black pudding and onion rings on the sauerkraut. Garnish with parsley. Pretzels taste good with it.
