Berry gratin with meringue

Ingredients

Servings: 4
  • 300 g Raspberries and blackberries (fresh or frozen)
  • 2 packages Bourbon vanilla sugar
  • 7-10 Tbsp Juice of 1 lime or 1 lemon
  • 2 Protein
  • 100 g Sugar
  • 4 TABLESPOONS Almond slivers
  • 1 Lime to decorate

Directions

    Select fresh berries, wash and drain on a sieve (defrost frozen berries)

    mix berries with vanilla sugar and lime or lemon juice, up to 1 teaspoon, and leave to stand for about 30 minutes

    Beat the egg white with a hand mixer until very stiff. Let the sugar trickle in. Add the rest of the citrus juice

    Place the marinated berries in 4 small fireproof dishes. Spread the meringue mixture cloudy over them and sprinkle with almond slivers

    Bake the berries in a preheated oven (electric cooker: 200 °C/ circulating air: 175 °C / gas: level 3) for approx. 10 minutes until golden brown. Decorate with lime slices as desired. Serve hot or cold
