Wash, clean and quarter the strawberries. Wash and sort blueberries and blackberries. Wash currants and strip them from the panicles. Sort the raspberries. Cut the vanilla pods lengthwise and scrape out the pulp with the back of a knife.
Set aside approx. 250 g berries. Put the remaining berries, sugar, vanilla pulp and vanilla pod into a pot and simmer for about 8 minutes. Mix the pudding powder and about 1 tbsp. cold water. Stir the pudding powder into the compote and let it simmer for about 1 minute
Add the remaining berries and let the compote cool down while stirring occasionally. Arrange the compote in glasses and decorate with lemon balm
