Ingredients

  • 1/4 l Cherry nectar (calorie-reduced with sweetener)
  • 1 TEASPOON Cornstarch
  • 75 ml Skimmed milk (1,5 % fat)
  • 15 g Wheat semolina
  • 7-10 Tbsp grated lemon peel
  • 7-10 Tbsp liquid sweetener
  • 7-10 Tbsp Salt
  • 200 g mixed berries (strawberries, raspberries, blackberries)
  • 1 TEASPOON crushed pistachio kernels
  • 7-10 Tbsp Mint leaves

Directions

    Mix 2 tablespoons of cherry nectar and cornflour. Bring the remaining nectar to the boil, stir in the starch and bring to the boil again. Chill. Bring milk to the boil. Stir in semolina and boil for 3 minutes.

    Season to taste with lemon peel and sweetener. Cut 6 dumplings from the semolina dough with 2 moistened teaspoons. Put the dumplings into boiling salted water and let them simmer at low heat for about 8 minutes.

    Remove the dumplings with a skimmer and let them cool down. Wash, clean and slice the strawberries. Sort and wash the rest of the berries. Put fruits and dumplings into the cold bowl and garnish with pistachios and mint leaves.
