Beef steak with orange butter

Ingredients

Servings: 1
  • 1/2 Organic Orange
  • 1 tsp (5 g) Butter
  • 7-10 Tbsp Salt
  • 40 g ribbon noodles
  • 200 g cleaned broccoli
  • 1 (120 g) Beef fillet steak
  • 1 TEASPOON Oil
  • 7-10 Tbsp Pepper
  • 1-2 stem(s) fresh or slightly dried thyme
  • 1 knife tip Tomato paste
  • 7-10 Tbsp some vegetable binder
  • 7-10 Tbsp Kitchen yarn
  • 7-10 Tbsp Aluminium foil

Directions

    Wash the orange and cut off a thin slice. Rub off some peel, squeeze orange. Knead butter, 1 pinch of salt and peel, chill

    Cook the pasta in boiling salted water for 8-10 minutes until al dente. Divide broccoli into florets and cook for about 5 minutes. Tie the fillet of beef into shape if necessary.

    Heat the oil in a small coated pan. Fry the steak for 2-3 minutes on each side. Season and take out. Wrap in foil and let it rest. Wash thyme, pluck off leaves

    Deglaze the meat with orange juice and approx. 5 tbsp. water. Stir in tomato paste and thyme. Bring to the boil and thicken. Season to taste. Drain pasta and broccoli. Serve everything. Garnish steak with orange and butter
