Ingredients

  • 175 g streaky smoked bacon
  • 3 Onions
  • 175 g Gherkins
  • 8 Beef roulades (approx. 160 g each)
  • 7-10 Tbsp Salt
  • 7-10 Tbsp freshly ground black pepper
  • 8 TSP medium hot mustard
  • 3 TABLESPOONS Oil
  • 250 g Mushrooms
  • 1/2 l Vegetable broth (instant)
  • 1.5 kg green beans
  • 1 collar Parsley
  • 125 g Whipped cream
  • 6-7 TABLESPOONS dark sauce thickener
  • 35 g Butter
  • 8 Roulade needles

Directions

    Cut the bacon into strips. Peel onions and cut two onions into rings. Cut gherkins into sticks. Wash the meat and dab dry with kitchen paper. Put the roulades on a large kitchen board and spread them out a little flat. Season with salt and pepper and spread with mustard.

    Spread onions, bacon and cucumbers on the roulades and roll them up tightly. Fix with roulade needles. Heat the oil in a casserole, fry the roulades in it vigorously while turning. In the meantime wash and clean the mushrooms and cut them in half as desired. Add the mushrooms to the roulades, fry briefly and deglaze with 600 ml water and stock. Bring to the boil and braise at low to medium heat for about 1 hour. In the meantime clean and wash the beans, put them into boiling salted water and cook for about 20 minutes. Wash parsley, dab dry and chop finely. Finely chop the remaining onion. Lift the roulades out of the stew and keep them warm. Pour cream into the stewed stock, bring to the boil, stir in the sauce thickener, bring to the boil again and season with salt and pepper.

    Bring to the boil and braise at low to medium heat for about 1 hour. In the meantime clean and wash the beans, put them into boiling salted water and cook for about 20 minutes. Wash parsley, dab dry and chop finely. Finely chop the remaining onion. Lift the roulades out of the stew and keep them warm. Pour cream into the stewed stock, bring to the boil, stir in the sauce thickener, bring to the boil again and season with salt and pepper. Add the roulades to the sauce, heat up briefly. Meanwhile melt butter, fry diced onion in it until transparent and add parsley. Drain the beans, let them drain and pour onion-parsley butter over them. Serve the roulades in a pot and the beans in a small bowl. Boiled potatoes taste good with it
