Wash the thyme, dab dry and, except for something to garnish, pluck leaves from the stalks and chop finely. Peel garlic and chop finely. Wash the meat, dab dry and cut into strips. Mix 4 tablespoons of oil, garlic, chopped thyme and meat. Leave to marinate for about 30 minutes.
Clean, wash and cut the peppers into strips. Heat 1 tablespoon of oil in a large frying pan. Fry the bell peppers for about 3 minutes, season with salt and pepper and remove. Place the meat with the marinade in the hot pan and fry for 3-4 minutes while turning. Deglaze with orange juice and stock, add the bell peppers and simmer covered for 2-3 minutes. Season to taste with salt and pepper and garnish with the rest of the thyme. Flatbread tastes good with it
