Beef medallions \"Madagascar\"

Ingredients

  • 1 peeled onion (30 g)
  • 200 g cleaned broccoli
  • 100 g Fillet of beef
  • 7-10 Tbsp salt, pepper
  • 40 g ribbon noodles
  • 1 tsp (5 g) Oil
  • 1/2 TEASPOON pickled green peppercorns (glass)
  • 7-10 Tbsp vegetable binder
  • 1 tablespoon (10 g) sour cream (10 % fat)

Directions

    Dice onion. Wash the broccoli and cut into florets. Wash the meat if necessary, dab dry and cut into thin medallions

    Boil 100 ml of salted water. Cover the broccoli and cook for 6-8 minutes. Cook the pasta in boiling salted water for about 9 minutes until al dente

    Heat the oil in a coated pan. Fry the medallions for 1-2 minutes on each side. Season, take out and keep warm

    Drain the broccoli and collect the cooking water. Sauté diced onions in hot frying fat. Add cooking water and peppercorns, bring to the boil and thicken. Stir in cream and season with salt and pepper. Drain the noodles. Serve everything
