Beef curry in peanut sauce with rice

  • 200 g Basmati rice
  • 7-10 Tbsp Salt
  • 1 tin(s) (400 g) Coconut milk
  • 1-2 TABLESPOONS red curry paste
  • 5 TABLESPOONS Fish sauce
  • 2 TABLESPOONS demerara sugar
  • 2 stem(s) Lemon grass
  • 100 g roasted peanut kernels
  • 500 g Rump steak
  • 3 Kaffir lime leaves
  • 1/2 Pot of coriander

Directions

    Prepare rice in boiling salted water according to package instructions. Bring half the coconut milk to the boil while stirring. Stir in curry paste and simmer for about 3 minutes. After 1 minute add fish sauce, sugar and lemongrass.

    Roughly chop the nuts. Wash the meat, dab dry and cut into thin slices. Add remaining coconut milk to the curry sauce, bring to the boil. Add meat, nuts, except for a little bit for sprinkling, and lime leaves.

    Simmer for about 5 minutes. Wash the coriander, shake dry and pluck the leaves from the stems. Arrange rice and meat in bowls and sprinkle with coriander leaves.
