Bean stew with chorizo sausage

Ingredients

  • 1 medium onion
  • 1 Garlic clove
  • 600 g French beans
  • 400 g Tomatoes
  • 6-8 Stem(s) Thyme
  • 2-3 TABLESPOONS Olive oil
  • 1 TABLESPOON Tomato paste
  • 1/2 TEASPOON Rose peppers
  • 600 ml Vegetable broth
  • 400 g strained tomatoes
  • 1 can(s) (425 ml) white beans
  • 200 g Chorizo sausage (Spanish pepper sausage)
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp Sugar
  • 7-10 Tbsp Oil

Directions

    Peel and finely dice the onion and garlic. Clean, wash and possibly break the green beans into pieces. Clean, wash and chop the tomatoes. Wash thyme, dab dry and, except for something to garnish, remove leaves. Heat oil in a pot.

    Sauté onion, garlic and thyme in it. Add the tomato pieces and fry briefly. Add tomato paste and paprika, sauté. Deglaze with stock and strained tomatoes, add green beans. Bring to the boil, cover and cook for about 10 minutes. Pour white beans into a sieve, rinse and drain. Cut the sausage into slices. Brush a coated pan with oil and heat it up. Fry the sausage slices for 3-4 minutes while turning them until crispy. Season stew with salt, pepper and sugar.
