Bean mortadella salad with mustard vinaigrette

Ingredients

  • 500 g green beans
  • 150 g cherry tomatoes
  • 2 small red onions
  • 125 g Italian mortadella
  • 1 collar Rocket
  • 1 Head Lollo Rosso
  • 6 stalks of chives
  • 2 TABLESPOONS coarse mustard
  • 5 TABLESPOONS Vinegar
  • 1 TEASPOON Honey
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 6 TABLESPOONS Oil

Directions

    Clean the beans, halve them if necessary and boil in boiling salted water for 13-15 minutes. Wash and halve the tomatoes. Peel and halve onions and cut into strips. Quarter mortadella slices.

    Clean and wash the rocket and Lollo Rosso and drain well. Pluck the salad leaves finely. Wash the chives, shake dry and cut the stalks into small rolls. Drain the beans and rinse in cold water.

    Mix mustard, vinegar, chives and honey and season with salt and pepper. Fold in the oil. Mix both salads, tomatoes, beans, onion strips and mortadella loosely and arrange in bowls.

    Drizzle with the vinaigrette.
