Bean and radicchio salad

Ingredients

  • 400 g frozen green beans
  • 2 can(s) (425 ml) broad white beans
  • 2 Onions
  • 4 TABLESPOONS Olive oil
  • 5 TABLESPOONS White wine vinegar
  • 7-10 Tbsp Sugar
  • 2 (200 g each) Heads radicchio salad
  • 100 g smoked turkey breast in slices
  • 8 stalks of chives
  • 7-10 Tbsp Salt
  • 7-10 Tbsp Pepper
  • 7-10 Tbsp pink pepper berries

Directions

    Cook the beans in salt water for about 5 minutes, then rinse in cold water. Put beans in a sieve, rinse and drain. Peel and finely chop the onions. Heat the oil in a small pot and sauté the diced onions over medium heat for 2-3 minutes. Add vinegar, 1 pinch of sugar and 2 tablespoons of water and simmer for 2-3 minutes. Cut out the radicchio stalk and remove 12 leaves. Wash the salad.

    Cut lettuce hearts into fine strips. Put green beans, bean seeds and vinaigrette in a bowl and mix. Let the lettuce steep for about 30 minutes. Cut turkey breast slices into strips. Wash the chives, dab dry and cut into small rolls. Add chives, radicchio and turkey breast strips to the salad, season with salt and pepper and arrange in the radicchio leaves. Garnish salad with pink pepper berries
